Couscous Salad


Boil 1 ½ cup water, add a little bit of olive oil, mix in 2 cups of couscous and immediately remove from the stove.
Fresh peas (cook for 10 min)
Finely chopped feta
Finely chopped cucumber
Fresh mint
1 can of chick peas
Finely chop a little bit of parsley and coriander (never too much because it has a strong taste).
For color (on top), add finely chopped kaki (orange color) and boiled egg cut in quarters.
Put all ingredients in a bowl and then make a dressing of
Finely chopped garlic, fresh ground pepper, salt, olive oil (virgin), and freshly squeezed lemon.
You can experiment with fillings...
Raisins
Artichokes
Sun-dried tomatoes
Goat’s cheese
Red onions (for a minute under the grill)
Walnuts
