Chutneys



Coconut:

1 big cup shredded coconut, 4-5 sprigs of fresh coriander, 2 medium green chillies, ½ tsp tamarind or lemon juice, salt to taste. Grind all the ingredients in a blender, with a little bit of water till you have a smooth paste.

Peanut:

1 big cup roasted peanuts, 1 small onion, 2-3 green chillies, t tsp ginger, coriander leaves about 2 tsp and salt to taste. Grind all the ingredients in a blender, with a little bit of water, till you have a smooth paste.

To season uncooked chutneys use the following method:




Heat oil in a small pan and when hot add 1 tsp mustards seeds. When they pop add 1-2 s mall or big dried red chillies (don’t break up the chillies) and then a few dried curry leaves. Pour this fried mixture over the uncooked chutney.
