Gemengde groene bonen met walnootknoflookdressing

50 g gedopte walnoten• 1 teen knoflook, fijngehakt• 4 takjes peterselie, fijngehakt• 4 el olijfolie•1 handje verse doperwten• 1 el appelciderazijn of wittewijnazijn• 500 g gemengde groene bonen zoals sperziebonen, sugar snaps en peultjes• extra: keukenmachine

Hak de walnoten, knoflook en peterselie fijn in de keukenmachine. Klop er de olie en de azijn door. Breng op smaak met zout en peper. Kook de bomen in een ruime pan met water en wat zout in ca 7 minuten beetgaar. Giet ze af en meng er direct de walnotendressing door. Serveer bij wild, biefstuk of gevogelte.

Baked Beans

Voor 4 personen


30 min bereidingstijd

1 el olijfolie
8 plakjes pancetta
1 ui, fijngesneden
1 teen knoflook, geperst
100-150 g chorizo, in dunne plakjes
2 tl gedroogde oregano
1 tl gerookt paprikapoeder
1 blik tomatenblokjes
1 blik cannellinibonen, afgespoeld en uitgelekt
Zout en versgemalen peper
Evt 1 el honing

Verhit de olie in een ruime pan en bak de pancetta 1-2 min per kant op matig vuur knapperig. Laat uitlekken op keukenpapier. Zet het vuur laag en bak in dezelfde pan de ui, knoflook en chorizo ca 10 min tot de ui zacht is. Voeg de oregano, paprikapoeder, tomatenblokjes en 125 ml water toe. Breng aan de kook, zet het vuur iets lager en voeg de bonen toe. Laat nog 10 min heel zacht koken tot de saus dikker is. Breng op smaak met zout en peper en meng er evt een beetje honing door.
Schep de baked beans in diepe borden en verdeel de plakjes pancetta erover.

Yellow Chickpea Soup

Serves 4
Yellow split peas 250 g
Butter 3 tbsp
Black mustard seeds 2 tsp
Cumin seed 1 tbsp
Onion 1, finely chopped or grated
Green chillies 1-4 deseeded and chopped
Fresh ginger 4cm piece, peeled and cut into matchsticks
Cloves of garlic 3, chopped
Ground turmeric 1 tsp
Ground coriander seed 2 tsp
Tomatoes 5, chopped
Water 100 ml
Coriander leaves from 4 sprigs
Chicken stock 250 ml
Butter a little

Directions
Put the yellow split peas into a pan and cover with a litre of water. Boil for 40 minutes, skimming away the foam that rises to the top and adding more water if necessary. Drain and mash a little with a fork to break up the dahl slightly. Set aside.
Melt the butter in the same pan and add the mustard seeds and cumin. Cook over a low heat then add the onion, chilli and ginger. Cook for about 3 minutes before adding the garlich, salt and spices, followed by the tomato and half a tsp of salt. Add the water and cook for about 10 minutes.
The contents of the pan should look glossy and be fragrant. Stir in the split peas, cook for another 10 minutes (add a splash more water if the dahl seems dry) then add the coriander, chicken stock and 1-2 tbsp of melted butter at the end. (I sometimes whiz half the soup in a blender and stir it in to give an even more velvety finish).
